If your holiday experience includes encountering food everywhere–much of it cookies and candy–you’re definitely not alone.
This month we’re featuring nutritious soups and a chili to make when time permits and then freeze in portions that will serve you and your family. Defrost when you need a quick and healthy meal, and serve with a nice spinach salad and some whole-grain bread brushed with olive oil.
You can easily double this soup recipe by doubling the ingredients. A cup makes an excellent mid-morning or mid-afternoon snack that boosts your feel-good serotonin and keeps hunger pangs from magnetically pulling you toward that cookie plate.
Ingredients:
1 cup onion, chopped
1 cup celery, chopped
2 cups red bell pepper, chopped
2 cups potato, chopped (peel on for more nutrition, peel off for a more elegant presentation)
4 cups low-sodium chicken or vegetable broth
2 T red salsa
How to make it:
Into a large soup pot put everything but the salsa.
Bring to a boil over high heat and then reduce heat and simmer, partly covered, for about 25 minutes.
Test the vegetables by inserting a fork. When they’re soft, turn off the heat, remove the lid to let the steam escape, and stir in the salsa.
Cool a bit and then purée in batches in a blender or food processor, being careful to let any steam escape.
