If you’re looking for a fresh, fun alternative for a summer party appetizer, try these delicious skewers, made with watermelon, cucumber and feta cheese. Although these do have some dairy, they are gluten and sugar free, making for a healthy, yet elegant treat.
There are loads of ways to stack and serve these—you can either use cubes of all of the ingredients, or you can just cube the cucumber and watermelon and sprinkle the feta on top.
INGREDIENTS
2 Tbsp. fresh lime juice
1 tsp. olive oil
1 Tbsp. balsamic vinegar
1 pinch table salt
1 pinch black pepper
1 cup fresh seedless watermelon chunks
1 cup cucumber chunks
1 cup feta chunks
1 Tbsp. fresh mint leaves, chopped
DIRECTIONS
Mix together the lime juice, olive oil, balsamic vinegar, salt and pepper in a small bowl. Cut up the watermelon, cucumber and feta into chunks. Then using small skewers, stack watermelon, feta, mint leaf, and cucumber chunk in order. Drizzle the balsamic mix over them.
