Want to try something different? How about bitter melon? This Asian/Indian fruit has a bitter flavor, but mixed with other vegetables and herbs, it makes a delicious meal. The bonus? Bitter melon has been shown to balance insulin levels as well as the immune system. It’s great in juices –and you can even pickle them.
INGREDIENTS:
8 pieces shrimp
4 cloves garlic
1 onion, small
1 tomato, medium
2 eggs
3 Tbsp. coconut oil
Salt and pepper
1 medium ampalaya (bitter melon), cut in half lengthwise, cored and sliced into thin pieces
DIRECTIONS:
Bring the coconut oil to medium-low heat in a saucepan. Beat the 2 eggs, and slowly pour into the oil, allowing the eggs to set. Then use the spoon to break into small pieces. Add the garlic, onions, salt, and pepper in the coconut oil. Just as they are clear, add the shrimp and sliced bitter melon. Continue until cooked, and serve with or without rice. Chop the tomato and add last.
