Having a barbecue this summer? These flourless onion rings let you indulge in a favorite side dish without all of the guilt. And they’re baked, not fried!

INGREDIENTS

  • 1 to 2 Vidalia Onions, sliced into rings
  • 1 egg
  • 1 cup almond or hazelnut flour
  • ¼ cup fresh grated Parmesan cheese
  • 1 tsp. garlic powder
  • 1/4 to ½ tsp.  paprika
  • Sea Salt
  • 1 Tbsp. olive oil

DIRECTIONS
Preheat the oven to 400°F. Mix the dry ingredients in a bowl. Whisk the egg in another bowl.

Individually dip onion rings in the egg batter and then in the flour mix, double dipping if needed for coating.

Place the rings on a baking sheet covered with parchment paper.

Drizzle or spray oil on the rings and bake in the oven for 15 to 20 minutes. If you are using the broiler, keep a close eye on them; they’re done when golden brown and crisp.

Serve with anything or alone.
